Historically, Italian food has been influenced by class structures as well as geographic locale. We intend to combine the best of the Cucina Povera, the traditional peasant or working class fare, and the Cucina Alto-bohrghese the preparation of the cooks of the landed and merchant families. The Cucina Povera utilized local produce, hunted animals and harvests from the sea. The Cucina Alto-borghese made use of these bounties as well, but diversified them with their added knowledge of cuisine from other lands. It is our goal to retain the dignity of the Italian classics while at the same time offer modern interpretations. We can only accomplish this by using the finest ingredients.
